Jack’s on Pearl unveiling two-story steakhouse in Lone Tree next year
The family behind a south Denver steakhouse is bringing its wet-aged beef, dry-aged fish and several new dishes to Lone Tree next year.
Jack’s Modern Steakhouse, 9155 Park Meadows Dr. in Lone Tree, will take over a two-story restaurant last used by Mimi’s Cafe. It will be the second location of a concept created by Steve Lockton and launched three years ago in Denver as Jack’s on Pearl.
The Lone Tree steakhouse will open Tuesday, Jan. 6, its chef and president announced earlier this week.
“Opening in Lone Tree feels like bringing Jack’s home,” Darryl Shoemake, the president of Jack’s Modern Steakhouse and a Lone Tree resident, said in a statement.

“After years of seeing the area’s incredible growth, and hearing from guests and neighbors craving a great dining experience without heading to Denver, it just made sense,” he continued.
Jack’s on Pearl, 1475 S. Pearl St., is known for “wet aging” beef, meaning it’s sealed and refrigerated for days in its own juices. At the Lone Tree location, the kitchen is working with Wagyu beef.
The upcoming steakhouse is debuting new menu items, including a bone marrow appetizer, in-bone short rib and Iberico ham. Sashimi, shrimp and scallops round out the seafood dishes.
Jack’s Modern Steakhouse boasts an outdoor patio, a private event space and a kitchen larger than that of the original restaurant. It will be open for lunch, dinner, happy hour and weekend brunch, according to management.
