A Denver chain of chicken sandwich shops opened locations at Red Rocks Amphitheatre and Foothills Mall in Fort Collins in April, marquee placements as it prepares to expand nationwide.
Birdcall launched its first restaurant in 2016 in Five Points and has grown to about a dozen locations in Colorado, Texas and Arizona, according to the company. Up to seven more are expected before year’s end.
The Red Rocks concession is by the south entrance ramp and will be open for all shows this season, according to a company statement. The Fort Collins restaurant is at 3300 S. College Ave. on the western edge of the mall’s lot.
Birdcall started franchising earlier this year with the goal of having 200 locations across the United States by the end of 2028.
“There’s great opportunity for growth and we’re looking forward to working with franchisees who are well connected in their community, passionate about food, and are excited to bring our efficient, craveable and exciting brand to their market,” Birdcall CEO Mark Lohmann said in a statement.
Restaurant creations include the crispy chicken shawarma, the “rancher” with bacon onion jam, white cheddar and barbecue sauce, and the “southern” with pimento cheese and coleslaw. Dine-in customers order using tablets by the front counter.
Birdcall was originally founded by Denver restaurateurs Jean-Philippe Failyau and Peter Newlin, who currently run the Gastamo Group and its brands, Park Burger, Perdida, Homegrown Tap & Dough and Lady Nomada.
