Cerebral Brewing sets open date for new Aurora taproom with 40 drafts

Cerebral Brewing’s second taproom is going from pop-up mode to permanently open.

On June 28, the 9-year-old beer maker will welcome patrons to its new bar, located at the site of its production facility at 9990 E. Colfax Ave. in Aurora. There they’ll find 40 draft taps serving an array of Cerebral’s sought-after IPAs and barrel-aged specialties, as well as non-alcoholic options like hop water and NA beer. The taproom will regularly host food trucks, live music, events and tastings.

If this sounds familiar that’s because Cerebral opened a makeshift taproom at its 18,000-square-foot brewing hub last March. That taproom was always supposed to be temporary, however, as the company built out its new, much larger gathering space.

At the time, Cerebral’s co-owner Sean Buchan said he wanted to welcome the surrounding community from the Aurora Cultural Arts District during the transitional period so that it became a familiar destination. The weekends-only drinkery closed on March 4 of this year to allow for construction on the permanent space.

Putting Aurora on the beer map is also something of a personal mission for Buchan, who was born in Aurora and studied at the nearby University of Colorado Anschutz Medical Campus. Cerebral’s original location remains open and busy at 1477 Monroe St. just off Colfax in Denver.

“The pop-up was received incredibly well and garnered its own set of amazing regulars,” Buchan said by email. “It was so wonderful getting to know the neighborhood and we’re excited to keep growing those relationships within the community.”

The new taproom currently boasts space for 100 patrons, but capacity will grow once the brewery adds a second-story mezzanine in the future. Unlike the pop-up, it’s expected to be open six days a week, from Tuesday through Sunday.

While the atmosphere will be lively on June 28 with food trucks and live music, Cerebral is planning a larger grand opening soiree for later this summer.
