Olive & Finch is flying into Golden Triangle.
The local cafe chain, started by Mary Nguyen in 2013, will open a sixth location at 1140 Bannock St. in the fourth quarter this year, according to Callie Sumlin, a spokesperson for the business.
The 4,200-square-foot space will be on the ground floor of Dryden, a recently completed apartment complex developed by Charlotte, North Carolina-based Quarterra.
Permit filings submitted to the city show the spot will have a 460-square-foot patio able to fit 30 people.
The indoor dining area, which appears to have a counter-service layout similar to Nguyen’s other locations, can hold up to 113, according to the filings.
The location follows a run of expansion for the concept, which has a coffee-shop feel and is open for breakfast, lunch and dinner.
Nguyen cut the ribbon on a Union Station spot early last month, and Sumlin said a location at downtown’s Denver Performing Arts Complex is set to open in May.
Nguyen parlayed the success of Olive & Finch’s initial City Park West location to a 2017 opening in Cherry Creek. She followed it up with the early 2023 debut of Little Finch, a sister concept on the 16th Street Mall.
“This was something I wanted really deeply so I sought out to create it,” Nguyen told BusinessDen in 2023, when the DPA spot was announced. “Our goal was to make food accessible and now there are a lot of places just like us.”
