Wine Of The Week: Pasqua’s ‘Hey French, You Could Have Made This But You Didn’t’

What’s a little rivalry between friends? That’s what Italy’s Pasqua Wines ask with its oddball blend, Hey French, You Could Have Made This But You Didn’t. It’s a well-humored middle finger at French winemakers—one of the only wines in Italy that blends different vintages and ages it on lees to make a French-ish, delightfully unique wine.
The premium white blend is a flex of technique but also an exploration of odder, unconventional practices, namely, blending a range of grapes harvested across seven vintages into one white wine—techniques often used on French soil, specifically in Champagne, but seldom seen in Italy.
The newest edition (instead of vintages its released in editions) of this anti-establishment wine starts with a blend of Garganega, Pinot Bianco and Sauvignon Blanc, topped up with a multi-vintage blend of wines harvested between 2013 and 2021. The finished wine will spend up to four months on lees for texture and creaminess before it is laid to sleep in steel tanks. The finished product is richly mineral, with unctuous structure and texture for days. Look for notes of chamomile, orange zest, and a salty minerality. $60
