With Santorini’s largest swimming pool at the center of a nearly 12,000-square-foot pool complex and an outpost of Monaco’s famous Beefbar, there’s no more decadent hotel on the island than the five-star, One Michelin Key Andronis Arcadia in Oia, where every single suite and villa also has its own infinity pool. Andronis Arcadia sits just outside the center of Oia, Santorini’s whitewashed cliffside village at its northern tip, known for its sunset views and concentration of luxury cave hotels. Unlike those properties, which cling to the caldera cliffs and generally face south toward the volcano, Arcadia looks northwest across the Aegean. The resort is close enough to walk into Oia but removed from its crowded lanes, and the Michelin Guide specifically cites its combination of sunset views and seclusion in awarding the hotel One Key.

The hotel opened in 2019 with 53 suites, Evexia Spa, Pacman Sunset Restaurant and an infinity pool. A major expansion in 2022 added the Grande Pool and its surrounding pool complex, along with a new boho-style poolside area adjoining Pacman, private cabanas, a dedicated pool bar and an expanded day-to-night program of DJs and live performers. Beefbar Santorini followed in 2023, along with another major expansion of the accommodations.

Today Arcadia has 113 suites and villas spread across a low-rise resort rather than stacked along a steep cliff face, every one of them with a private infinity pool. That alone separates Arcadia from many of Oia’s cliffside hotels. Private outdoor space is central to the resort’s design, with pools and verandas incorporated into every accommodation and natural hues, textured surfaces and locally influenced materials used throughout. The low-rise layout also allows Arcadia to spread out in a way that is difficult to duplicate among the densely packed hotels built into Oia’s cliffs.

Then there is the Grande Pool. The pool itself covers 10,764 square feet, making it the largest on Santorini. Including the surrounding sunbeds, private cabanas, hammocks and pool bar, the entire complex covers 1,110 square meters, or 11,948 square feet. Surrounded by loungers and cabanas, the Grande Pool functions as the social center of the resort during the day, with food and cocktails served poolside before the emphasis shifts toward sunset later in the afternoon. Its sheer size sets Arcadia apart on an island where many luxury-hotel pools are narrow infinity pools fitted onto cliffside terraces.

Beside it is Beefbar Santorini, easily one of the coolest restaurants on the island. Restaurateur Riccardo Giraudi created Beefbar in Monte Carlo in 2005, and the concept has since expanded to Paris, Milan, St. Tropez, Mykonos, New York, Dubai and other international destinations. Rather than following the usual dark-wood-and-leather steakhouse formula, Beefbar combines some of the world’s most delicious and expensive beef with international street food, seafood and bold contemporary design.

At Andronis Arcadia, that formula gets an appropriately Mediterranean setting. The restaurant opens toward the Aegean and the sunset, with interiors by Cédric Capron built around sculptural forms, textured surfaces and a polished Mediterranean palette. The pool and sea form much of the backdrop, making Beefbar as much a design destination as a dining room. Greek chef George Kyrtsallidis, whose career has also taken him to Belgium and Denmark, leads the kitchen.

The menu runs from Kobe beef prosciutto, Wagyu carpaccio, Kobe gyros and mini smashed burgers to crunchy lobster tacos with satay sauce, calamari tempura and red shrimp saganaki. A Greek salad gets watermelon and feta vinaigrette, while deliberately extravagant sides include lobster mac and cheese and mashed potatoes with black truffle. Beefbar’s signature charred steaks remain the centerpiece, but seafood, Greek ingredients, lighter dishes and the indoor-outdoor setting make the Santorini menu considerably better suited to an Aegean summer than simply transplanting a Monaco steakhouse to Greece.

Pacman Sunset Restaurant provides the hotel’s other major dining option. The alfresco restaurant serves breakfast, lunch and dinner overlooking the Aegean, with a menu combining modern Greek and Mediterranean cooking with Japanese dishes and sushi. Cocktails, DJs, sunset events and live performances give Pacman a more casual day-to-night character than Beefbar, and Andronis has a full program of live music there during the 2026 season.

At the top of the accommodations is Eden Villa, a three-story, 6,458-square-foot private residence accommodating as many as 12 guests. It has six bedrooms, two private pools, its own fitness center and spa room, a barbecue area and a fully equipped kitchen. The largest private villa in Oia its secluded position within the resort makes it considerably more like a private residence than an oversized hotel suite, while still providing access to Arcadia’s restaurants, spa and Grande Pool.

Wellness is another significant part of the property. Evexia Spa includes a distinctive Kneipp circuit with adjoining hot- and cold-water pools whose stone-lined floors are designed to stimulate reflexology points. The treatment incorporates cryotherapy wraps and clay masks, followed by a guided walk through the pools and a finishing foot treatment. A large fitness area includes modern equipment and a separate studio for personal training and toning sessions.

Andronis Arcadia is a member of the Legend Collection by Preferred Hotels & Resorts and is the largest and most resort-like property in the Greek-owned Andronis luxury hotel collection. Its services extend beyond the expected pool-and-spa setup, with 24-hour room service, private butler service on request and arrangements for private jets, helicopters and limousines. Past guests have included former Miss Universe Olivia Culpo, who topped Maxim’s 2019 Hot 100 and appeared on the issue’s cover.
